Storing Your Meats Properly

There are many things you should do to properly care for your meat. Meat must be stored properly or you will become sick.

It is very important that food is stored properly. If food is not stored properly, it can go bad.

If it is allowed to go bad and you eat it anyway, you could become very sick. This is especially the case with meat if it is not stored properly.

Meats keep the best at low temperatures where the growth of bacteria and other things are hindered. The bacteria are what cause someone to become sick if the meat is not properly taken care of.

It is best if meat is stored below a temperature of 40 degrees Fahrenheit. However, below this temperature will only affect how long the meat keeps.

Most meat will keep longer when it is frozen rather than when it is kept in the refrigerator. Meat generally must reach a temperature below 28 degrees Fahrenheit in order to become frozen.

The refrigerator is the best place to keep meat if you plan to use it within the next few days. It is best if your refrigerator is set to a temperature of 35 degrees Fahrenheit.

The meat should also be wrapped in something so that is does not become dehydrated, take on another odor, or get contaminated with other things in your refrigerator. Your meat will last longer if you wrap it in foil rather than plastic.

The general rule for refrigerated meat is that you should not store it for more than four days when you eat it. However, if your meat is cured in some way, it will generally last longer.

Some cured meats can last in the refrigerator for 60 days. Frozen meat can last much longer in the freezer.

In addition, the freezer does not remove the physical properties of the meat that are so important such as taste, texture, smell, nutritional value, and so forth. Only a little of the nutritional value is lost when the meat is thawed.

Of course, frozen meat will become a different color, but this is completely normal and okay. There is a different frozen spoiled meat color as well, which you will need to learn to recognize.

The freezer should be kept at a constant temperature about -10 degrees Fahrenheit. Even though meat freezes at 28 degrees Fahrenheit, you can be sure that the meat is frozen and it will keep longer if you keep it at a lower temperature.

The temperature of 28 degrees Fahrenheit is the maximum that your meat should reach if you take it out of the freezer for a period of time. If the meat does not rise above this temperature you can stick it back in the freezer and it will be fine.

However, if it does rise above this temperature you should prepare and eat it instead of sticking it back in the freezer. You can extend the amount of time that certain kinds of meat can be kept in the freeze by properly wrapping them in the right materials.

The packaging your meat is wrapped in should prevent air and moisture for entering and leaving. It should also protect the meat from freezer burn.

Freezer burn is when specific areas of the surface of the meat become very dehydrated and its consistency changes. If this consistency changes, it is likely that your meat will not taste very good.

In general, meats that are kept at a temperature at least 0 degrees Fahrenheit or below can last for a very long time. Beef, lamb, ground beef, ground lamb, and fish will last for six months at this temperature.

Meanwhile, veal, fresh pork, and poultry will last for four months. Other variety meats will only last for three months while seasoned sausage will last for two months.

Other meats, such as sliced meat, bacon, or lunch meat do not freeze very well. If you want to freeze them you should make sure that they are vacuum packed.

Without vacuum packaging these items will develop a rancid flavor very quickly. You can also refreeze meat that has been cooked in some cases.

Poultry in particular will taste like it has been cooked before, but it will still be good. However, if the meat is stored with gravy or other sauces, the sense of being ‘reheated’ can be reduced.

As you properly store and take care of your meat, you will not be one of the unfortunate who suffer through food poisoning. There are many things that you should make sure you do, but they are all worth it and your meat will tasted better in the end.

INGREDIENTS TO MAKE KENYA MEAT SAMOSA RECIPES

1 large pack egg roll wrappers

1 lb. Ground beef or lamb

1 cooked medium potato

cup cooked green peas

1 med. Onion, grated

1 clove garlic, crushed

Country Meat Rollups

I love creating recipes that are quick and easy to prepare during the work week and even for group gatherings.

This is a very simple ground meat recipe. It does not matter what type of ground meat used.  I have made this recipe with beef, pork, veal, lamb and venison.  The following recipe is basic for 4 servings, you can adjust accordingly to accommodate 4 to 40 or more.

Country Meat Rollups

1.5 pound ground meat
1 medium size onion (chopped)
1 can of  sliced mushrooms
2 cloves of garlic(minced)
1 cup of sour cream
1 egg (beaten)
1 egg separated (make egg wash with white and add egg yolk to the beaten egg) 
1 package of Crescent Rolls
1 can cream of mushroom soup

Brown the ground meat, onions, mushrooms and garlic till meat is no longer pink. Set aside to cool.

Take the Crescent Rolls, pull the rolls apart and then roll each one out as large as you can.

Once the meat mixture has cooled, add 1/2 cup of sour cream and the beaten egg, Mix well.

Now take a scoop of the meat mixture(approximately large egg in size) place this in center of each rolled out Crescent Roll.  Once this is complete take each Crescent Roll and roll it around the meat mixture, complete seal the meat inside the roll.

Place rolls on a cooking sheet sprayed with cooking spray.  Take the egg wash and brush over each roll. 

Bake at 350 for approximately 15 -20 minutes rolls should be nice and brown.

While the rolls are baking, take the can of Cream of Mushroom soup and mix with remaining 1/2 cup of sour cream.

Heat the soup mixture and serve as a sauce on the rolls.

Variations for this recipe: I have also taken French Onion Soup and Golden Mushroom soup together to create a sauce.  I have also used Ready to Bake Bread dough for a large rollup for a group of 8-10.

I let the dough thaw over night in frig. I then roll out the bread dough to the size of a cookie sheet. Place the meat mixture in the center of the dough and rollup. Bake this for 30-40 minutes.
